Please don’t think that we will only enjoy the sweets, here’s something healthy and salty :) I’m a big fan of Italian cuisine, and even more than that I love meals that are quick to complete. In general, I don’t cook anything that takes longer than 1 hour. Not because I don’t like this type of food, but because I just don’t have time. These super-tasty bruschette are done in literally 10 minutes. An excellent option for a quick dinner, appetizer with lunch or as finger-food when you’re hanging out with friends. And, what is very important to me, they are a healthy option. I always say that I have a strong filter for unhealthy food – but that filter gets completely clogged and stops working when I think of dessert :)
- Bread - the best would be a baguette, but not with seeds
- 3 tablespoons olive oil
- 1 clove of garlic
- 300 g cherry-tomato
- 125 g mozzarella
- teaspoon dried basil
- Preheat the oven to the maximum temperature. In a tin pan put some baking paper and on it stack bread slices about 1 cm thick. Bake for about 5 minutes, just enough that they get crisp and start to get golden. Meanwhile, put 2 tablespoons of oil and finely chopped garlic in a bowl and mix well. In another bowl, combine the eighth sliced tomatoes and finely sliced mozzarella with a tablespoon of oil and a teaspoon of basil (I use dried, but of course fresh is better).
- Brush the warm bread with olive oil and garlic(or just drizzle if you want them drier) and put a spoonful of tomato stuffing on each slice of bread. Return to the oven (if you have it, turn on baking with fan) and bake for 2 minutes until the cheese melts. Enjoy them immediately :)
