
A cod and potato salat is, as well as a cod and potato casserole, a traditional dish that mom prepares for Christmas Eve. Light, but concrete, it will very well serve as a main dish. My roommate and I wanted some lighter food one day, so I just prepared this otherwise festive salad and it was very nice :)
There are no rules when you’re making this salad… you can throw in whatever you feel like it might fit, boiled eggs, cheese or hard vegetables such as radishes, which I used on this occasion. I always season it with lemon juice because it fits very well with fish. Fillet of cod is a tasty and concrete piece of fish meat. I usually buy the frozen version since I find it practical and of good quality.


- 500 g frozen cod fillets
- 3 medium potatoes
- 1 small onion or 3-4 spring onions
- freshly squeezed juice of one lemon
- two tablespoons of olive oil
- salt and pepper
- optional: fresh peppers, radishes
- Wash the potatoes well and cook in the shell as needed (depending on the size and type of potato, about 30-45 minutes). Cool and peel.
- Unfreeze the cod and cook for 15 minutes in salted boiling water. Drain and let cool. Peel onions and cut into thin slices. Instead you can use spring onions, just cut into rings.
- Cut the potatoes into slices and place in a bowl. Stir in the chopped onions and cod. If desired, add sliced radishes or say fresh pepper rings. Add salt and pepper to taste, cover with about two tablespoons of fine olive oil and the juice of one lemon.
- Stir and serve immediately. Bon appetit!
